Seared eye fillet, chimichurri and double-fried chips piled into a soft loaf with roast garlic aioli.
Ingredients List
Chimichurri
Fries
Garlic Aioli
Method
- Start by preheating the oven to 200°C fan forced, place the whole garlic into tin foil with its head chopped off, pour over the oil and salt and roast for 35-40 mins until softened.
- Salt both sides of the steak.
- If using fresh potato, slice lengthways into slabs (5-7mm thick), stack the slices on top of each other then cut into sticks (3-4mm thick), and plunge into cold water with ice for 15 mins.
- Make the chimichurri by combining all ingredients in a bowl, taste and adjust, set aside.
- Heat frying oil to 170°C.
- Slice the mini soft loaf in half and remove some of the bread inside (makes it easier to eat).
- Drain and pat dry the fries, coat with corn starch and fry for 6 mins, remove from the oil for a few minutes to drain and cool, bring the heat up to 190°C and fry again for 2-3 mins until golden. Place into a large mixing bowl and sprinkle over the spices, toss and set aside.
- Remove the garlic from the oven, squeeze it onto a chopping board and paste it with a knife, add it into a small mixing bowl with the mayo and lemon, combine and set aside.
- Cook the steak on a cast iron pan until you reach an internal temperature of 46°C, rest for 5 minutes before slicing.
- Spread a tablespoon of garlic aioli per side of bread and stack in this order: steak, chimichurri, fries, and a splash more chimichurri. Push down while you slice in half. Enjoy.
