Jam Roll
COOK TIME: 45 mins
SERVES: 8-10
We’ll go a long way for the perfect jam roll. In this case, it’s all the way to CWA Tasmania for Georgia’s take on this classic cake.
Ingredients List
Method
- Preheat the oven to 170ºC fan forced.
- Grease and line the base and sides of a 38 x 25 x 2.5cm baking tray with baking paper, snipping in the corners with scissors to make a neat corner. Lightly spray the baking paper.
- Separate the eggs, placing the whites into the bowl of a stand mixer fitted with a whisk attachment. Whisk the egg whites with the salt on medium-high speed until stiff peaks form, then gradually rain in the sugar. Continue whisking until the sugar is fully dissolved into the egg whites.
- Add the egg yolks, one at a time, beating in between each addition, until just incorporated.
- In a separate bowl, sift the flour and cream of tartar together, then gradually fold this into the egg mixture, taking care to not overmix.
- Heat the milk in a small bowl in the microwave for approximately 15-20 seconds, until warm. Add the bicarb soda and mix until dissolved. Fold this mixture into the cake batter with a plastic spatula, until just combined.
- Pour batter into the prepared tray, gently spreading into the corners using an offset spatula and smoothing the top, without knocking out the air.
- Place in the oven and bake for 14-16 minutes, rotating the tray halfway through baking, until golden and risen. The cake is done when it springs back when lightly touched.
- While the sponge is cooking, lightly dampen a clean linen tea towel with warm water using a spray bottle and lay flat on your bench. When the sponge is cooked, immediately remove the sponge from the tin and carefully turn out onto the tea towel, baking paper facing up. Gently peel off the baking paper.
- Working quickly, spread over the jam evenly. Starting from the short end, roll up the sponge tightly using the tea towel and leave it wrapped for approximately 2 minutes on your bench.
- Carefully unwrap the roll and transfer to a serving plate, seam side down.
