Crispy, cheesy smash burger tacos piled with lettuce, tomato, red onion and pickles, finished with a homemade special burger sauce.
Ingredients List
Special burger sauce
Method
- Add the beef mince to a mixing bowl with the salt, garlic powder and pepper and lightly combine with your hands.
- Add a heaped spoonful of the mince mixture onto a tortilla and use your fingers to press it out into a thin patty, leaving about a centimetre border.
- Repeat until all the mince and tortillas are done.
- Heat a tablespoon of oil in a non-stick pan on a medium-high heat and add one of the tortillas meat side down. “Smash” it down lightly with your spatula and cook for two minutes before flipping over.
- Add a slice of cheese onto the meat after flipping, cook for a further two minutes, then set aside.
- Repeat steps 4 and 5 until all the tortillas are done.
- While the tortillas are cooking, prepare your salads and burger sauce.
- Thinly slice the lettuce and set aside.
- Cut the cherry tomatoes into quarters and finely dice the red onion. Combine both in a bowl and set aside.
- For the burger sauce, add the mayonnaise and ketchup to a small mixing bowl.
- Finely dice the red onion and gherkins and add to the bowl, along with the sugar and pickle brine. Stir to combine.
- To serve, add some lettuce, the tomato and onion mix, pickle slices and a drizzle of burger sauce to each taco.
