James (Jimmy) is a 26-year-old carpenter turned food content creator. He walked off the job site with no plan but knew he wanted to do something in the kitchen. Everything he knows comes from a childhood spent in the kitchen with his mother, who bought him his first cookbooks and taught him the basics. Jimmy operates at ‘cruiser’ pace, tasting, adjusting, and observing the food as he goes, because he believes the journey is just as important as the destination. For James, cooking is a ‘zen’ experience and believes it should not be taken as seriously as many people do today. His favourite childhood food was his mum’s tuna patties, which he continues to make to this day.
